A Recipe for Cake Using Zucchini (Courgette) and Chocolate

We all should do more home cooking than we do right now, and I will chat in more detail about that later on.
But before we do, here is a delicious and curious cake recipe to start your mouth watering.
The contents may give the impression of being a little strange for a cake, but I strongly recommend that you try it nevertheless.
You will be amazed and delighted that you did.
A Recipe for Cake With Chocolate and Zucchini (Courgette)
You Will Need:
One teaspoon cinnamon spice
1 t. vanilla flavouring
2 1/2 C. flour
1/2 cup sugar
2 teaspoons bicarbonate of soda
One C. brown or muscovado sugar
Half C. butter
three courgette, circa six inches in length, shredded (approx. two cups)
half a cup sunflower oil
One tsp common salt
0.5 Cup buttermilk
three free-range eggs
4 Tbs cocoa powder
A half cup of to 1 cupful choccie chips
Method:
Whilst you are preparing the ingredients, set your oven so it preheats to 325 degrees F / 160 degrees C / Gas Mark 3.
Grease a 9" x 13" cake pan and place to the side.
Take a mixing bowl andcombine sugars, the oil and the butter.
Break in the eggs, buttermilk, and vanilla and stir well until well mixed.
With the aid of a sieve, sift the cocoa, flour, baking soda, cinnamon and salt together.
Combine the two mixtures
Stir in zucchini and mix well.
Pour into the cake tin and sprinkle chips over the top.
Put into the pre-heated oven and cook for approx 45 mins.
Allow it to cool a little, and let it cool on a wire rack.
So Why Cook at Home?
Many family members consider that the family kitchen should be the heart of the home, and it is probably a truism that Mom's home cooking is good for family life. Unhappily, in these busy modern times, many family members find it very tough to dedicate the time necessary to cook at home, and as a consequence their family life is damaged.

If you consider the period spent getting dressed to leave your home, finding the eating place, waiting for the restaurant staff to take your order and finally waiting for your order to arrive, there can be little doubt that sitting down and eating a meal together is significantly faster.
Home cooking is healthier, that's beyond doubt, but this is only the case if you do it right. Just dining at your own dining table won't help at all if you are serving junk food and TV dinners. These are mostly high in bad fats and carbohydrates and definitely nowhere near as wholesome as a scrumptious home cooked recipe cooked with hand picked vegetables.
